Ingredients:
- 27 ounces collard greens (can Southern-style, drained)
- 15 ounces Great Northern Beans (drained and rinsed)
- 1 1/2 cups fresh green beans (cut into 1-inch pieces)
- 3/4 cup carrots (diced)
- 1/2 cup green bell pepper (diced)
- 1/4 cup white onion (finely diced)
- 4 cups tomato juice (spicy)
- 2 cups vegetable broth
Directions:
- Combine all ingredients in a crockpot, adding liquids last. Stir and turn heat to low. Allow to cook for 4-6 hours before serving.
