Berry Breakfast Bowls- Mini French Toast Casseroles

Yields: 4 servings | Total time: 35 minutes

Ingredients:

  • 2 tablespoons berries
  • 1 slice bread
  • 2 teaspoons pecans
  • 1 eggs
  • 1 tablespoon milk
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon cinnamon

Directions: 

  1. Chop berries, bread, and pecans.
  2. Mix egg, milk, vanilla, and cinnamon in small bowl.
  3. Layer berries, bread, and pecans in 4 well greased ramekins (or a muffin tin).
  4. Pour egg mixture evenly on top of each and let soak for 15-20 minutes (or overnight).
  5. Bake at 350 degrees for about 40 minutes or until eggs are set and absorbed.
