Vegan Breakfast Potatoes

Ingredients:

  • 6 medium potatoes (sliced into 1/8 inch slices)
  • 1 tablespoon coconut oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground paprika
  • salt (to taste)
  • 2/3 cup water (or vegetable broth)
  • 1 teaspoon parsley flakes (dried)

Directions: 

  1. Heat oil in a non-stick skillet. Add potatoes and stir to coat with the oil.Sprinkle potato slices with onion powder, garlic powder, paprika, parsley, salt and stir to coat.
  2. Add water or vegetable broth and cover skillet and cook until liquid is absorbed and the potatoes are crisp on the outside, about 15-20 minutes. Carefully turn potatoes over to crisp on the other side.
